I quite innocently asked my college roommate what the hell McCartney could have been thinking, writing a song about a cow. I was met with about 30 seconds of stunned silence. It had never even occurred to me that I had misunderstood the lyrics until that moment.

In George's book he said he wrote this in another room in the studio while Paul and John were doing overdubbs and I think that Ringo went home all ready.
